This a 255 mm long kiritsuke-tipped gyuto. It is 26c3 steel, a steel often referred to as "spicy white," a reference to its similarity to Hitachi White Paper Steel #1, to which it has a similar composition. This style knife is best suited to push/pull cutting. This come standard with a 3D printed PETG handle. Handle upgrades are available.
